Is it better to use milk or water in waffle mix? ›

The milk in your waffles acts as a binding agent and adds a level of richness that you just can't obtain with water alone. That's not to say that you can't substitute water for milk in waffle recipes and you likely have at some point — you'll still end up with waffles.

Why are my waffles not light and fluffy? ›

Making pancake and waffle batter ahead of time is a huge no-no and will lead to flat, dense results every time. Even letting your batter hang out for just a few minutes after you've mixed it before you start ladling it onto the griddle will lead to less fluffy results.

  2. A handful of blueberries or other small or sliced berries.
  3. Miniature chocolate chips. ...
  4. Miniature cinnamon chips. ...
  5. Peanut butter (about 1/4 cup peanut butter for every cup of flour). ...

Should you let waffle batter rest? ›

Recommended overnight or 2 hr resting – for the tastiest waffles, rest the batter overnight in the fridge or for at least 2 hours. This makes the flour grains absorb the liquid so it makes the inside of the waffles softer.

Why won't my waffles get crispy? ›

Make Sure Your Waffle Iron Is Hot

You should actually hear the batter sizzle on contact. The outer crust will immediately begin to set and crisp. Moisture in the batter quickly turns to steam and evaporates out the sides of the pan. If the iron isn't hot, none of this happens and the waffles will be soggy and squishy.

What does adding an egg to waffle mix do? ›

Many people whip the egg whites when making waffles because it makes them fluffier. Thus, include this step if you want a soft interior for your waffles. Separate the whites from the yolk before mixing the ingredients to save time.

What does butter do in waffle batter? ›

Some people think that butter gives a slightly thicker batter, though it is not something we have noted ourselves. However, you may find that it slightly affects the cooking time of the waffles, so keep a closer eye on the first couple of batches until you are sure of the cooking time in your waffle maker.

Can you over mix waffle batter? ›

Whisk until the batter is combined, but not too heavily. A few lumps are fine. If you over-mix the waffles, you could end up with chewy, hard waffles from drawing all of the gluten out of the flour.

Which flour is best for waffles? ›

On the flip side, waffles aren't as flaky-delicate as baked goods, making pastry flour too fine for the job. Good old AP, or all-purpose, flour is where it's at. If you want to sprinkle in a tablespoon or two of buckwheat or rye flour for added nutty heft, go for it.

Should waffle batter be thick? ›

A thick batter is what allows the waffles to cook enough on the outside that they get golden brown and crispy, but not overdone in the center. For crispy edged waffles with fluffy soft insides, thick batter is key! That's in part why there's both cornstarch and buttermilk in this recipe.

What is in Middleton Foods waffle mix? ›

Product Detail

Ingredients:Wheat Flour, Corn Flour, Buttermilk Powder, Sugar, Buckwheat Flour, Raising Agents (E341, E500), Dried Whole Egg, Soya, Salt, Flavouring.

Why do you put baking soda in waffles? ›

In addition to creating a fluffy texture, baking soda also helps to neutralize the acidity in the batter, which can improve the flavor and prevent the pancakes or waffles from tasting too sour or tangy.

What should I grease my waffle iron with? ›

Most waffle makers are nonstick, like my personal favorite shown above from Sur La Table, but sometimes a little extra “love” makes them release that much easier. To grease the pan, consider using a pastry brush and neutral oil like vegetable, canola or grapeseed oil to lightly grease the surface.

How do you keep waffles crisp while making more? ›

Here are some other ways to keep the sogginess at bay:
  1. Place your waffles on a cooling rack in a low-heat oven (don't stack the waffles on top of each other).
  2. Throw your waffles in a toaster to refresh their crispiness.
  3. Make sure your waffle iron is very hot.

How do you keep homemade waffles from getting soggy? ›

Waffles toward the bottom of that stack will have no choice but to go limp. To keep a cooked batch of waffles warm, place them in a low oven directly on the oven rack, or on a wire rack where the air can circulate—never on a sheet pan, where they'll trap that steam and go soggy on the bottom.

How do you keep homemade waffles crispy? ›

Bake Them in the Oven for That Crisp Finish

You probably already know the trick to keep your waffles warm by placing them in a 200°F oven until you're ready to eat. But if you set your oven a little higher, to 300°F, this trick will crisp waffles even further in addition to keeping them nice and warm.
